Let’s talk about blade steels. There are literally hundreds of different steels that can be used to make knives and people get very confused regarding the difference between them. I’ve tried to make this easy for my customers by simply giving the choice between “Stainless Steel” and “Carbon Steel”. If you want a shiny blade that rusts less, choose “Stainless”. If you want a dark colored blade that will patina over time, choose “Carbon”. I use a handful of different steels for my knives, depending on their size, design, and intended use. I’m always looking for the most ideal combination of hardness, toughness, corrosion resistance, and ease of sharpening. I’ve used all of the following steels: S35VN, CPM154CM, CPM3V, D2, 440C, 80CrV2, Magnacut, Elmax, 5160, O1, and more throughout my knifemaking career.
